Welcome to our latest mouth-watering dish. Tender chicken pieces and brown rice infused with fino sherry and the delicate flavour of the world’s most precious spice, saffron, slowly revealing on your palate. The crunch of roasted almonds is a wonderful contrasting texture in this meal and combines well with fresh thyme, parsley and shredded kale.
Saffron Chicken is the latest addition to our menu and came about from a recipe testing evening in co-owner and Chef Dave Roberts’ home kitchen, inspired by his joy of Spanish cooking.
Dave explains: “I love cooking with saffron and the elements in this dish work really well together: texture created from the roasted almonds, the sweetness and intensity from the onion and saffron sauce. And the rice adds a great nuttiness to the meal.”
The challenge creating this meal? Using all of the cooking liquid in the final dish but not having the meal swimming in liquid once heated. We think Dave’s got it just right with a delicious meal that is simple yet sophisticated. Perfect for dinner or a flavoursome lunch especially if it’s accompanied by a cold beer!
